Vendor Rules

I. Stone Trough Market (STM) CANNOT:

a.       Sell Time Temperature Controlled Foods (TTCF) produced by Cottage Food Producers (CFP).

i.        TTCF are cold foods that must be held below 41 degrees, or hot foods that must be held above 135 degrees to prevent bacterial growth that can cause illness or harm. (Low Acid canned goods are TTCF’s and cannot be sold by us as a CFV.)


II. Stone Trough Market CAN:

a.       As a Cottage Food Vendor (CFV), can sell “allowable” foods produced by CFP’s in farmer’s marks, farm stands, food service establishments, and retail stores.

i.        Allowable Foods include any foods except:

1.       Meat, meat products, poultry or poultry products;

2.       Seafood, including seafood products, fish, fish products, shellfish, and shellfish products;

3.       Ice or ice products, including shaved ice, ice cream, frozen custard, popsicles, and gelator;

4.       Low-acid canned goods;

5.       Canibus products; or

6.       Raw milk and raw milk products.

ii.        Acidified canned goods (i.e. canned goods that CFV may sell)--Food with a finished equilibrium pH value of 4.6 or less that is thermally processed before being placed in an airtight container.  (See information regarding acidified canned goods included in CFP Rules)



1.       Pickled fruit or vegetables, fermented vegetables, or plant based acidified canned goods MUST (see: Texas Cottage Food Production | Texas DSHS) have unique batch number and pH value marked on the label.


III. Stone Trough Market MUST:

a.       Display a sign that states: “THIS PRODUCT WAS PRODUCED IN A PRIVATE RESIDENCE THAT IS NOT SUBJECT TO GOVERNMENTAL LICENSING OR INSPECTION.”

b.       Food sold by CFV that was produced by a CFP MUST have a label that states the date the food was produced and CFP’s address or DSHS Registration #.
